One day I would like to have a garden.

A bountiful healthy garden.

A garden full of vegetables, flowers, shrubs, and trees.

In order to achieve this goal Jason and I are attending a course offered at Weber State called Backyard Gardening.

Last night was the first course and it was fabulous! We learned about different types of gardens, how plants grow, how to pick seeds, and different compositions of soil and fertilizer.

and you best believe we have homework-test our soil.

Next week....Soil preparation and enhancement!

Saturday we celebrated early with a sushi dinner and a stroll down 25th Street in Ogden and Sunday we had a delicious dinner with our family.

In 2009 Jason bought me a bright pink Cyclamen plant for Valentine's Day. The first year it was beautiful, the blooms stayed on it for several months but died and didn't return until....February 20 when three huge blooms appeared.

Then next year the same.

Well guess what...we're approaching Valentine's Day and guess what I discovered this morning?

Every year this really amazes me...just like clock work the blooms appear.

Demon Cough and Mistress Chest Pain

I'm told yesterday was a beautiful day and Jason even has pictures to prove it, but sadly I had my head shoved under the pillows while trying to fight the demon Cough that has reared its ugly head once more. Only this time hr brought along his mistress, Chest Pain.

After three weeks of coughing I thought I was finally cured, but Saturday morning I woke up with a tickle that just wouldn't quit and after a day of coughing non-stop, I woke up Sunday morning with a chest pain I couldn't believe and phone sex operator voice (you know what I'm sayin'...and I'm sure you just said something weird under your breath...)

Well it's Monday and I feel a slight bit like Death.

I'm giving it a few more days and then I'm off to the doctor. Three weeks for a cough and now chest pain is just too ridiculous.

Snow and Sushi

After the driest December on record, our January finally has real snow!

After fun trip to Costco with my parents, a jaunt to see my sister, cruising the aisles of IKEA and a great sushi dinner with the folks, we returned home to 8 inches of glorious snow.

Thanks again to my parents for this awesome snowblower! It's definitely getting used!

Egg Cup

The other night Jason and I were walking about the house like famished zombies and desperately needed dinner, but as usual nothing sounded good. After flinging several ideas at one another, I remembered something I saw on Pinterest this week...egg cups. It's pretty much exactly what it sounds like, eggs in cups...but the cup is made of ham!

Baked Egg Cups

12 Eggs
12 thin slices of deli ham (round)
1/2 Cup of your favorite cheese (I used shredded Parmesan)
1/2 Cup diced green onion or chives (or leave them off)
Fresh salt and pepper

Preheat the oven to 400. Spray a muffin tin with cooking spray. Lay a piece of ham in each hole creating a little ham cup. Crack one egg into each hole and sprinkle with salt and pepper.
Bake the eggs for about 12 minutes…until the white is firm and the yolk is still nice and runny.
Carefully remove each egg from the muffin tin and top with grated cheese and green onions/chives (or leave them off)

Enjoy! We did!

And the best part? Each of the egg cups are only about 100 calories and 17 grams of protein!

Sick, Taxes, Routine

It's been a few weeks, but we are still here.

After ringing in the new year, Jason and I both came down with a sore throat and wicked cough. It's been about 7-8 days and we are finally kicking the throat issues and the cough is slowly disappearing.

Aside from the sickness, things are going well. Jason is excelling in his classes and applying for new jobs that he can use his degree in and I'm alive...honestly, nothing special going on here. I work, I sleep, I workout, I eat and I wake up and do it all over again the next day. Tonight I'm gathering information for our taxes, so I guess that's something new, right?

After a movie and delicious dinner with our family, we rang in the new year with Big Bang Theory. It was a delightfully mellow (and much needed) relaxing night.

As for the year to come, we don't make silly resolutions that can't be kept. Overall we strive for a happier and healthier year and a goal to make it better than 2011.

Finger Update

Well lady and gents, it's been four days and I'm happy to say that it appears that the shot in my finger has worked. Aside from some extremely minor stiffness in the morning, my finger works perfectly.

It's been a long road, but I am so very grateful that it's over.

It's simply amazing! No pain, no locking, no stiffness!

Finger, Finger, Finger...You May Be Cured

It's only taken 2.5 years and several misdiagnoses, but I finally have a solid answer for my failing finger-a severe case of stenosing tenosynovitis (stuh-NO-sing ten-o-sin-o-VIE-tis), aka TRIGGER FINGER!

Trigger finger is when one of your fingers or your thumb gets stuck in a bent position and then straightens with a snap — like a trigger being pulled and released. If trigger finger is severe, your finger may become locked in a bent position-like mine! Trigger finger is caused by a narrowing of the sheath that surrounds the tendon in the affected finger.

Today I visited a terrific orthopedist who gave me some hope-injections...terrible, horrible, painful injections, but wrapped up in hope. Apparently, 50-60% of people who receive the injection are cured within 2-4 weeks. I've never had good luck, but I'm hoping with all my might that I'm part of the 50%. If I'm not, I'm faced with hand surgery.

So here's to hoping for the 50%!

To celebrate the holiday we helped Abby's parents put up Christmas lights on what may have been the most beautiful day of this Autumn season.

Jason defied gravity as he snapped each section into place on the roof.

After helping preparing the Palmers for Christmas we enjoyed a delicious turkey dinner with all the fixins.

A big thanks to everyone for contributing.

Yummy and adorable!

After dinner we headed to Walmart and Best Buy for Black Friday. Having never been to Walmart for Black Friday, we really didn't know what to expect, except for sheer madness and that's exactly what we got. Abby tripped in the parking lot, hitting her face and scraping her knees, luckily she didn't break anything or get run over by the insane people trying to park.

It was wall to wall rude people.

They pushed, the shoved, they elbowed, they stole, they cursed, it was really sad.

So much for the Christmas spirit!

Yuck.

Needless to say we quickly left Walmart without making a purchase-the lines were ridiculous and it was only 9:45 PM.

While walking through the parking lot back to the car, Abby spotted something that made the trip worth it...a crisp $20 bill waving in the grass without a wallet to belong to.

We decided to give it shelter.

As for our Best Buy adventure? It never happened. We drove by and the line had grown from four or five people at noon to hundreds. It wasn't going to be worth standing in line, so we ventured back home where we shopped until 2:00 AM online-a warmer and safer alternative.

It was amazing!

I had a great day at work, a party, food, flowers, the whole bit. Then I came home to go shopping with my mom. When we returned the house was decked out in new Halloween decor and all my friends and family were stuffed inside!

We ate delicious food, laughed, joked and enjoyed one another's company!

Oh and we watched the World Series!

By the end of the night we were all tuckered out!

Sepeti Mafi Palei 1954 ~ 2011 On October 10, 2011 our dear friend, father, brother and husband has taken his mission of love for life, and those in it, on to the next step.

He was born August 16, 1954 in Te´ekiu, Tonga to Sosaia Lotu Palei and Kalolaine Fetu´uaho. Married Dawn Sorenson August 16, 1984 in the Salt Lake Temple. Sepeti was always honest in his relationships and was never one to back down in an argument, in fact he was one to encourage passionate discussion. He loved reading the Bible everyday, enjoyed philosophy about life and helping others. He had a great sense of humor and loved to tease. Survived by his wife, Dawn; children: Katalina (Bryce) Buchanan, Kalolaine and Josiah; siblings: Mosa, Lupe, Peni, Siua and Lina.

A family viewing will be held Saturday, October 22, 2011, 6-8 p.m. at McDougal Funeral Home, 4330 South Redwood Road. A traditional Tongan wake and viewing will be held Sunday, October 23, 2011, 6-9 p.m. at the Laumalie Ma´oni´oni Methodist Church, 1553 West Crystal Avenue (2590 So). Funeral services will also be held Monday, October 24, 2011, 11:00 a.m. at the Taylorsville 25th Ward, 4505 South 3420 West where a viewing will be held, 9:30-10:30 a.m. Interment, Crescent Cemetery, 11200 S. State Street.

Rape/Sexual Assault Awareness

Today I helped my sister raise awareness about a growing problem, rape and sexual assault. She and I made chocolates and packaged them to auction off at an ASWC Seminar (V-Day) this week at Westminster College (8:00 PM, Oct 19 Gore Auditorium 112).

We created the chocolates....

and Mom and Jason packaged them...

After we made these delicious treats, we helped my parents plant a tree move a rock (deceptively heavy).

Note the ridiculous rock in the corner...small, right?

No.

It took 4 adults to move that thing.

Alas the hard work was done and we relaxed for the rest of the night.

One of the many reasons I love my new job is their Wellness Program. Three times a week I get to leave work for an hour and exercise-and still get paid! Neat, right? I know.

This week before I could start the wellness program, I needed to go get a physical and body workup. One major part of this event was the "Bod Pod."

While dressed in a spandex suit and a swimming cap (very sexy....), you sit in the pod and it tests your body composition. Though I was admittedly nervous for the spandex, the Bod Pod experience wasn't all that bad. The WSU staff also tested me with strength exercises, a blood test, crunches and other tests.

In a week or so, I'll meet with the staff again and we'll go over an exercise plan to help me on my wellness time. I'm very excited for the results to see where I can improve.

Hip Hip Hooray Kidney Stones

Much to my dismay, I was diagnosed with kidney stones this week-my first run in with these little buggers.

All I wanted to do was go home last night, take a nap and have some good food.

Instead I was up passing stones.

What are kidney stones exactly?

"Kidney stones (renal lithiasis) are small, hard deposits that form inside your kidneys. Kidney stones are made of mineral and acid salts. Kidney stones have many causes. In one common scenario, kidney stones form when the urine becomes concentrated, allowing minerals to crystallize and stick together. Passing kidney stones can be painful. The pain of a kidney stone typically starts in your side or back, just below your ribs, and moves to your lower abdomen and groin. It hurts...it's bloody...and it's exhausting.

First Week

The first week of working at the new job flew by! (granted, it was only half of the week). I think I'll be able to nestle into my job and really make it my own. I work with a lot of great people who have opened me with open arms. I look forward to learning more about my career and enjoying the new surroundings.

Promontory & Lake

Today we capped off the Labor Day weekend with a trip to the Great Salt Lake and Promontory Point.

May 10, 1869 the Union and Central Pacific Railroads joined their rails at Promontory Summit. Golden Spike National Historic Site commemorates this incredible accomplishment of this nation's first transcontinental railroad.

We also visited the Great Salt Lake and Spiral Jetty. The Jetty is considered to be the central work of American sculptor Robert Smithson. It's an earth work constructed in 1970. Built entirely of mud, salt crystal, basalt rocks, earth, and water on the northeastern shore of the Great Salt Lake near Rozel Point. It forms a 1,500 foot long, 15 foot wide coil jutting out from the shore.

Unfortunately the entire jetty wasn't visible, but we had a great time traveling out to the lake. We plan on going again when the lake water level drops a few more inches.

As far as the rest of the lake goes, it was amazing. The water was pink and foamy and at times it reeked of rotten eggs. Despite the smell, it was beautiful and the walk to Rozel Point was spectacular.

On our way home we stopped at the ATK/NASA rocket display. It was amazing to see the intricacy and size of these space wonders.

Roasted Garlic Bread and Dill Cheese

Last night we took a walk through Harmon's grocery store in Roy, UT. It was the nicest Harmon's we've ever been to. Huge bakery, delicious soup and salad bar, a fresh bread bakery counter, an entire aisle of baking supplies-including Cuisinart products and they even had an employee making fresh mozzarella cheese as we walked in! AMAZING! We couldn't leave without a few goodies-bread, cookies, cheese, Mmmmmm

So what did we make with out goodies?

How Do You: 6-3-1 Croutons

Sunday morning I realize I had forgotten to buy croutons for Caesar salad. *DOH* So I did the next best thing...experimented. I ended up with DELICIOUS homemade croutons.

I'll never buy croutons again.

I call them them:

"6-3-1 Croutons"

(6 slices of bread, 3 Tablespoons olive oil, 1 teaspoon garlic salt)

Start by heating your oven to 300 degrees.
Cut 6 slices of bread into cubes. I left the crust on mine, but if you hate it, cut it off. It doesn't detract from the taste at all, if anything my crust added to it. Also, I used a 9 grain wheat bread but I'm sure it would be just as good with white or french, or whatever you have.
In a medium bowl mix 3 tablespoons of olive oil and 1 teaspoon of garlic salt. Stir in bread cubes.
Once bread cubes are evenly coated, spread them on a baking sheet and bake for 20-30 minutes. Baking times vary on type of bread and oven, so keep on eye on them.
Let the bread cool and store in a plastic resealable bag.

ENJOY!

Cotton Bottom Garlic Burgers

Not for beer, but for delicious garlic burgers that melt in your mouth.

I had my first garlic burger at the Cotton Bottom about 7 years ago and sadly haven't made it back until tonight.

It was everything I remembered and more. It's definitely not going to be another 7 years before I make it back.

Discovering Eggplant

A few weeks ago, we received an eggplant in our Bountiful Basket (food co-op). Now, the only thing I knew about eggplants was that my dad hates them. He had a traumatic experience as a child (not being able to leave the table until he finished his eggplant) and ever since then he hates it. So I figured I'd hate it too.

After consulting with Jason, we decided we'd give it a go.

We cut it into 1/2 inch slices, rubbed them in olive oil, sprinkled garlic salt, baked at 350 degrees for about 10 minutes on each side and then accented it with melted Swiss cheese.

The result?

Delicious, soft slices of cheesy eggplant. :)

We will definitely have it again.

The Journey to a 3rd Wedding Anniversary

Next came our first date.

Soon we were spending every day together.

It wasn't long after that we decided we couldn't be without each other.

One day we took a ride on an Italian gondola...

and the journey began. We were engaged...

It's now three years later and I look back on all that has happened...

We've worn toilet paper on our heads...

We've traveled the world...

We've survived the bearded days...

and the...uh...headband days?

We've met amazing people...

We survived bumps, bruises and trying to cut off fingers...

We survived weird food and new cooking concoctions...

We've explored new modes of transportation...

But most of all, we're still here.

Marriage isn't easy.

Marriage isn't always fun.

But at the end of the day we're best friends and we stick together.

Through thick and thin.

Through joy and sorrow.

Through love and loss.

We are married and we love it.

Three years ago today I moved my belongings from SLC to North Ogden-the farthest I've ever had to move. The day was long and hot...and stressful. My parents helped Jason and I pack up all the boxes and furniture and haul it north. I blogged about the journey and how it would be different to walk more than 5 feet to get at my things, "It's nice that we have such a big place so we can spread stuff out, but it sure does make for a lot of walking (compared to when you have all your stuff in one room and you walk 5 feet to get something."

Well I've survived having an entire house for 3 years and I'm proud to say that I think most days it stays pretty clean-despite the years of accumulation.

The Roof, The Roof

Last night after playing a rousing game of billiards at Weber State (Jason won 4-0 because of technicalities in unspecified rules), I noticed something glowing on the hillside. "Are those lights or a fire?"

Jason responded, "Definitely a fire. Where is that?"

"It looks like it's by the house..."

We raced home to find that someone had started a fire at the base of Ben Lomond Peak, setting the hillside ablaze.

Firefighters had been fighting the fire since about 8:40, God bless them. Crews from the North View, Ogden, Weber, Plain City and Layton fire departments responded to the fire and put it out just before 11:00. Luckily no one was injured and no homes were burned.

The reason for the fire? Boy (4 of them, ages 11-14) playing with a lighter and lighting grass on fire-brilliant.

I've wanted to blog for a couple days but haven't really had any life changing or awesome things going on. So I guess I'll write about the basic day-to-day things we've been doing. Put your adventure hats on!

Jason's eyes are healing and he loves his new vision. He hasn't had a migraine for almost a week now! Bye bye stupid glasses!

We've spent the weekend finishing up Jason's summer class and gearing up for fall semester (yuck...oh wait... I don't have school anymore! Mwua ha ha ha ha ha... oh crap...Jason still does. *sigh*) In April 2012 Jason is graduating from Weber with his BS and we are SOOOO excited to be done for a little while. We might go on and do Masters degrees, but that conversation is still in progress.

What else have we been doing to pass our time? Games. Lots and lots of video games. This weekend Jason conquered Heavy Rain and Uncharted: Drake's Fortune (it took him 2 days...brand new game...)

He played Uncharted: Among Thieves (the 2nd in the series) first so we thought we'd give the first one a try and apparently he loved it so much he had to beat it right off the bat.

Luckily Uncharted: Drake's Deception (the 3rd one) comes out in a few months. And I'll admit, I don't mind the games. The story line is amazing and the quality of the graphics are incredible. It's just like watching an intense action/mystery movie.

Other than that we are boring people. We watch a lot of Pawn Stars and Numb3rs on Netflix. Oh and I can't forget to tell you about how we finally replaced the light bulbs in the refrigerator and freezer last night (after 2 years of them being out) and we replaced the furnace the filter (PARTAY!!)

OH AND SHARK WEEK STARTS TONIGHT!!!!

Jason's eye surgery went great! We were the first in line for the LASIK procedure and everything went off without a hitch.

After leaving Dr. Hoopes' office, we took a nap as directed and spent the day laying around so Jason's eyes could heal.

Though it was an inconvenience to put drops in his eyes and to stay away from his computer for the day, Jason is glad he did. Today he had his one day follow-up to see how his eyes were healing and to test his vision. Yesterday, he went into the operating room with 90/120 vision and today he had 20/15--that's better than 20/20! He's like an eagle!

So why we did drive all the way to Sandy to have Jason's eyes done? Because you don't cheap out on your eyes. Dr. Hoopes is the top LASIK eye surgeon in the world. After 15+ years with glasses, this week Jason will be saying adios to his frames!

Friday we took a trip to Hoopes Vision in SLC and visited with Dr. Hoopes, eye surgeon extraordinaire. After several tests, eye dilation and meeting with two doctors, Jason qualified for lasik eye correction surgery.

Wednesday he will be lasered and we'll say bye bye to bad eyes!

We are so excited to have the opportunity to do this for Jason.

No more headaches or nose pinching pain, just perfect eyes.

Ghost Towning: Gold Hill & Salt Flats

Located deep in Utah’s west desert near the Nevada border is the famous mining camp of Gold Hill. The town established in 1892 was named after a gold bearing mountain just east of the town. Gold Hill became famous for its location of many minerals including silver, gold, copper, lead, tungsten, and arsenic.

The town boomed and died several times in its existence. The first boom lasted for a decade until its richest mines were worked out and the town was nearly abandoned. During World War I arsenic was badly needed and Gold Hill was just the location to find the mineral.

The mines were reopened and new mills built, and in 1917 the Deep Creek Railroad was built into Gold Hill. When WWI ended arsenic was no longer needed and the town once again died. WWII reawakened the town due to the high demand of tungsten used in steel and electric filaments. Tons of the minerals were shipped out until the need slowed and Gold Hill dwindled once again.

In 1940 the last train rails were tore up and sold for scrap. During the 1940s several mines were reopened and were mined for arsenic. This was only temporary and in 1946 the schoolhouse was locked for the last time and the post office was finally closed in 1949, adding Gold Hill to the list of Utah’s ghost towns. In its history the town boasted a population of up to 3,000 people.

On our way back from Gold Hill we stopped at the Bonneville Speedway, AKA the salt flats. None of us had been there so we didn't really know what to expect but what we got was a lot of fun.

Bright white salt, cars in excess of 100 MPH and tons of laughs.

Spicy Oil

Last week we had an empty bottle, lots of oil, and a bunch of different kind of peppers. Jason had the ingenious idea of using the peppers to make a spicy oil for cooking. He chopped up the jalapenos and other peppers and stuffed them in the bottle along with the oil.

In a couple weeks, we'll have delicious jalapeno cooking oil.

Waiting for Lilies

I've been waiting to post about the beautiful lilies sprouting in my garden until they had grown to their full potential...well, that post has been cut.

Instead I blog about a very short walk (60 seconds) that was interrupted by a violent and sudden rain storm, a sprint across the cemetery in the pouring rain (quickest way to the house), a blown transformer which killed everyone's power (but not ours!) and a gust of wind that chopped my lilies down to stubs in the dirt.

Now my chopped off lilies reside in my kitchen, filling the cookie scented air with lily smell-which is delightful! But I'm sad that I couldn't see them grow all the way...I guess there's next year...so much for 4 months of lily growing...

How Do You-Roast Butternut Squash

This is a butternut squash-a small upside down one, but a butternut squash all the same. Butternut squash are extremely cheap, tasty and an easy way to get fiber, vitamin A and vitamin C.

Preheat your oven to 400 degrees F.

Cut the squash in half length-wise and scoop out the seeds with a spoon. (You won't need the seeds and such so throw them away, put them in a compost heap, whatever you want.)

Next use about a tablespoon of butter (or whatever spread you choose) and smear/spread it over the squash.

Once, you're done buttering, sprinkle with brown sugar (yes, this is a very low-cal side dish...) and season with a dash of pepper and salt.

Place the squash on a large baking sheet, flesh side up (the side with all the brown sugar and butter).

Bake in the oven for 25-35 minutes, until you can poke it with a fork and the flesh is tender.

How Do You??-The Beginning

This year I've had a lot of friends and family ask me how I make certain things and though I'm no expert, I'm happy to share what little I know.

This weekend I was inspired and thought that I should post some of my baking secrets here.

Most of the tips or recipes I've learned from my mom, while others I've researched or just struggled through, figuring it out on my own.

One thing I've learned through struggling is that I wish I had some way of knowing that the recipes or "How To" videos I found online were any good. Well rest assured, if they are being posted on here, I've tested them and think they are good--so take that as you will.

Keep in mind I'm no expert, so if you do it differently, good for you, but this is how I do it and how I like it, so take it or leave it :)

Independence Day

The day began with the rude awakening of teenagers beating on drums-prepping for the Fourth of July Parade, which I have to say is seriously lacking in actual floats and excitement, anyway, I digress. After the drum wake up call, Jason and I took a quick ride on the motorcycle to the lacking parade with Jason's brother Tyler and his lovely wife Heather. Next Jason joined me in the kitchen to make delicious cake pops and off to the Palmer BBQ we went.

Jason assisted my dad outside for set-up and BBQ while my mom and I made deviled eggs (my first time making them) and homemade vanilla and rocky road ice cream.

After several hours of set-up and hard work, the Palmers and family celebrated in style-the way my mom always does.

Her parties never disappoint.

We had such a great day!

Delicious food, great company and terrific fireworks and conversation.

Ghost Towning: Jacob City and Ophir

Growing up, my mom and dad would taking my sisters and I to ghost towns around the state. It was a great time for a history lesson, to see something genuinely old and to be with the family.

This weekend, my parents joined Jason and I on a hike to Jacob City and Ophir, Utah. Jacob City was born in 1865 when ore was discovered in a remote canyon between the present day cities of Ophir and Stockton. In Jacob City's prime there was an estimated population of 300 people and the town was equipped with several stores, a school, a hotel, many saloons and gambling houses, and of course the miners cabins. By the early 1900's the town was abandoned after the mines began to dry up.

Our second journey was a drive through Ophir, Utah.
Soldiers of the U.S. Army discovered this spot which created Ophir in 1865. The soldiers noticed that Indians in the territory were using bullets made from silver. The soldiers soon found the source and proceeded to dispatch the Indians. They named the location St. Louis. When the find became public, the site quickly became a town with no official name. In 1870, it was officially named Ophir after the rich mines of King Solomon. During its peak, a number of ornamental homes and buildings were constructed which, after the silver was exhausted and the town died, became a mute testimony that good times do not last forever.

Though the mining aspect of Ophir has died, Ophir still has a few residents, which makes it a semi-ghost town. Among newer homes, the remains of a time long past still survive.

Tomatillo Salsa Verde

In my Bountiful Basket last week, I got a surplus of jalapenos (Jason was thrilled), serrano peppers, poblano pepper, green onions, tomatillos, garlic, cilantro, and onion. I was thrilled to have all the different foods because it gave me a chance to try something new.

Tonight I tried my hand at tomatillo salsa verde

Tomatillo Salsa Verde Recipe

To cook the tomatillos, you can either roast them in the oven, or boil them. Roasting will deliver more flavor; boiling may be faster and use less energy. Either way works, though boiling is a more common way to cook the tomatillos.

INGREDIENTS

1 1/2 lb tomatillos
1/2 cup chopped white onion
1/2 cup cilantro leaves
1 Tbsp fresh lime juice
1/4 teaspoon sugar
2 Jalapeño peppers OR 2 serrano peppers, stemmed, seeded and chopped
Salt to taste

METHOD

1 Remove papery husks from tomatillos and rinse well.

2a Roasting method Cut in half and place cut side down on a foil-lined baking sheet. Place under a broiler for about 5-7 minutes to lightly blacken the skin.

2b Boiling method Place tomatillos in a saucepan, cover with water. Bring to a boil and simmer for 5 minutes. Remove tomatillos with a slotted spoon.

2 Place tomatillos, lime juice, onions, cilantro, chili peppers, sugar in a food processor (or blender) and pulse until all ingredients are finely chopped and mixed. Season to taste with salt. Cool in refrigerator.

Serve with chips or as a salsa accompaniment to Mexican dishes.

Makes 3 cups.
